Ingredients (for 18 pancakes):
1 pack (349g) silken tofu
400 ml soy milk
2 tb agave, or maple syrup
2 tsp vanilla extract
250 g wholewheat flour
2 tb baking powder
1/2 tsp salt
Oil spray/oil, for cooking
Instructions:
1. Add tofu, soy milk, agave, and vanilla to a food processor and blend well until
smooth.
2. Add flour, baking powder, and salt and blend until fully combined (don't overdo it).
3. Rest the batter for 3-5 minutes.
4. Heat a large, non-stick frying pan to medium heat and coat with oil.
5. Pour 1/4 cup of batter per pancake into the frying pan. Once bubbles begin to form,
turn them
over. Once both sides are golden brown, remove from the heat.
6. Serve with your favourite toppings. Enjoy!
